In her introduction to the Essentials of Classic Italian Cooking Marcella Hazan noted a common thread that binds together all the many regional cuisines of Italy:
“Food, whether simple or elaborate, is cooked in the style of the family. There is no such thing as Italian haute cuisine because there are no high or low roads in Italian cooking. All roads lead to the home, to la cucina di casa…”
Although justly famous for their haute cuisine, the French also have a special appreciation for the culinary tradition of the home. Embodied in the term à la bonne femme (literally meaning ”good wife”) it describes a style of food that is prepared in a traditional – in many cases exacting – yet nevertheless straightforward and unfussy manner. It is, in sum, food that speaks for itself.

As women chefs we have an natural affinity for the spirit of la cucina di casa and the cuisine de la bonne femme. We aspire to live up to that spirit with our frequently changing seasonal menus that feature homey French classics like Cassoulet and Choucroute along with traditional Italian hand made pastas, house made sausage, house cured pancetta, and home made desserts ranging from hearty bread pudding to creamy Panna Cotta.
